Turn excess greens into a comforting Chicken Noodle Soup. This easy, waste-free recipe is perfect for using up spinach, kale, cauliflower leaves or any extra greens for a nutritious and flavourful meal.

Ingredients

  • 1 l chicken stock
  • 250g roast chicken
  • 20 ml soybean oil
  • 10g crushed garlic
  • 10g crushed ginger
  • 1/2 brown onion
  • 1/2 carrot 2 stalks of celery
  • 100 g frozen greens
  • 50 g rice noodles
  • 5g Chilli Crisp

Method

  1. Lightly fry onion, celery and carrot till translucent.
  2. Add garlic and ginger cook for a further 2 mins on low.
  3. Add stock and bring to the boil.
  4. Add noodles, simmer for 5 mins till cooked.
  5. Add chicken and greens.
  6. Simmer till a good temperature.
  7. Stir in Chilli crisp.
  8. Garnish with fried onions.
